We are a small, family-owned bistro and mobile food trailer rooted in our passion for organic, clean, high-integrity food. From our bistro kitchen to our trailer pop-ups, every dish is crafted to nourish—not just fill—using ingredients you can trust and flavors you’ll remember.
This season marks a heartfelt shift. For years, James has carried the weight of creating nearly everything you’ve seen and tasted—pouring time, talent, and tireless love into each detail. From crafting recipes to cooking every dish—he has served selflessly.
Now, it’s my turn to lead with fresh clarity.
We’re entering a new chapter focused on simplicity, sustainability, and strength—starting with our menu. We’re refining what we offer to highlight what we do best: organic crepes and New Zealand-style real fruit ice cream, made with the cleanest ingredients and the deepest care.
Whether you visit our bistro or catch our trailer at a vineyard, we’re still the same family, full of purpose, and honored to serve you.

🌿 What Makes Us Different
We proudly use:
• Organic A2 dairy and pasture-raised eggs from farms like Alexandre, Straus, and Azure
• Cold-pressed olive oil and unrefined coconut oil
• Expeller-pressed sesame oil in our house-made sauces
• Local, seasonal produce whenever possible
We never use MSG, seed oils, artificial additives, or blended/conventional dairy. Every ingredient is chosen for integrity, nutrition, and flavor.

We compost or repurpose food scraps, and all prices include tax for simplicity. As a fully owner-operated business, we’re personally involved in every dish.

⚠️ Gluten-Free Crepe Update
(Effective May 20, 2025)
We’ve discontinued gluten-free crepes due to sourcing and kitchen limitations. Many menu items are gluten-friendly, but:
• Meals are prepared in a shared space
• We can’t guarantee zero cross-contact
• Not recommended for severe gluten allergies

👨🍳 MEET THE CHEF: JAMES M. GIAUDRONE
From the age of four, James found joy in the kitchen—a passion that led him to train under acclaimed Chef Joe Vallone and earn the title of Top Cook of the 1st Marine Division, where he prepared meals for thousands of Marines. His culinary journey also brought him to the tables of legends like country star Randy Travis and Mr. Barnes, co-founder of Barnes & Noble.
But his greatest inspiration came when he met Yumi in Seattle/Bellevue WA. Her plant-based lifestyle and dedication to wellness transformed his approach to cooking, inspiring him to embrace 100% organic, clean ingredients. Beyond her influence in the kitchen, Yumi brought a rich professional background in HR, accounting, and IT systems support—skills that became the backbone of their growing business. Her expertise ensured that their dream would be built on not just passion, but also strong operations, smart finances, and seamless technology.
With Yumi’s unwavering support—both in vision and full financial investment—they founded Le Testimony Organic Bistro, a place where food, faith, and family come together.
Their son, Yisrael—a vibrant young drummer thriving on an organic diet—is living proof of their mission. Every dish they serve reflects their values:
