Chef James Giaudrone:

James Giaudrone began his culinary journey in his home kitchen at the age of four. His love for cooking led him to later apprentice for Chef Joe Vallone of Ma Ma Vallone’s Steak House in Cle Elum WA. In his time serving the country, he cooked for thousands of US Marines and received the award of Top Cook in the 1st Marine Division. As he continued developing his gift, he cooked for the Senior Pastor and the congregation of World Harvest Church and their Prep School, as well as celebrities like Randy Travis, and the Cofounder of Barnes and Noble Books Stores,  Mr. Barnes. 

Traveling to Europe and Southeast Asia, James experienced new and inspiring cuisine which he then infused into his own recipes. He brought these culinary experiences and rich blends of flavors back to Cle Elum starting Cle Elum Crepe Company with two friends in May 2011.

James met his wife Yumi at a local church in Seattle, in which seeing her lifestyle eating heavily plant based and preparing whole organic foods not only changed her life, but his forever.  Due to seeing his health improve and the declining health of others around him, he could no longer serve up non organic food to people due to his strong convictions.   

James, Yumi, and their son Yisrael moved to Redding in August of 2018.  Their son, Yisrael has been growing strong eating an Organic diet and is a prodigy drummer.  With Yumi's full financial support and backing from working in the Computer Tech field, they started their latest project, Le Testimony Organic Bistro. This brings all this experience and creativity to Redding CA, with a vision to see people be in health as their soul prospers. Using premium ingredients and unique blends of spices, James brings fresh flavors to the table in his continued pursuit of culinary excellence with his family.  James has been nominated by many people for a Michelin as well.  They love Organic food and Jesus.
